2019 marks the 40th anniversary of the exclusive partnership between Champagne Bollinger & James Bond. Champagne Bollinger secured its position as the Official Champagne for Britain’s most famous secret agent when it appeared on screen with the release of Moonraker in 1979.
To mark the release of the upcoming movie No Time To Die, the 25th instalment of the James Bond series, Bollinger has created a limited edition wine dedicated to 007, with a 2011 vintage inspired by the world of Bond. The jet-black 75cl bottle features the number “25”, formed from the titles of the previous films, which are also etched on the glass of the wooden gift box. The 2011 vintage is unusually created entirely from Pinot Noir, sourced from the Grand Cru village of Aÿ, where the House was first established in 1829. This is the first time that both the vintage and village have been used exclusively by Bollinger to make a dedicated wine. Sensations
To the eye: A golden colour, distinctive of black grape varieties; very fine bubbles. To the nose: A beautiful aromatic complexity; ripe fruit and spicy aromas; hints of roasted apples, apple compote and peaches. On the palate: A subtle combination of structure, length and vivacity; bubbles like velvet; pear, brioche and spicy aromas, notes of fresh walnut.

History
Dating back to the 12th century, the origins of Château Clarke began when Cistercian monks planted the first vines and in 1818 the knight, Tobie Clarke purchased the land, named after him to this day.
After passing through several hands, Baron Edmond de Rothschild bought the property in 1973. Baron Edmond restored the property and redesigned the vineyard resulting in a wine-producing area of 54 hectares and modernising the winemaking process throughout. Today, the vines are planted on clay-limestone hilltops that enable the Merlot vines to express their character.
Ever since the first wine was bottled in 1978 the quality of Château Clarke wine has steadily improved which is a testament to the stringent controls on the method of cultivation and wine production.
Since 2001, all the handpicked and meticulously sorted grapes are transferred into a wooden vat using gravity for the vatting process. The wine is then placed in new barrels where it is left to mature for between 14 and 18 months. This process means that the wine produced at Château Clarke is a true reflection of the land that made it: concentrated and distinguished, it allies power with aromatic complexity, and has great potential for ageing.

This exceptionally rare release pushes Dom Pérignon’s voluptuous 2003 vintage to new heights. Filled with a fresh energy and a dark intensity, the champagne has reached its second plénitude – the point at which it evolves into a different expression.
This is a physical wine. It calls to you and draws you in. After 15 years on its lees, the P2 boasts an even greater longevity. So, while its dried fruit and dark spice aromas and muscular salinity are exquisite today, it is also ideal for the cellar.

BLEND ORIGIN
With ripening accelerated by the heat and low grape yield, harvesting began on the August 21. It was the earliest Champagne harvest since 1822, producing a ripe and healthy crop. Ultimately, the contrasting weather conditions during the year resulted in remarkably luscious, highly concentrated grapes, recalling the legendary vintages of 1947, 1959 and 1976.

- Veuve Clicquot yellow label Brut is a luxury full bodied, rich, but restrained in style. It represents 95% of sales for the house which is now part of the LMVH group, producing 11 million bottles per year.
The house was founded in the eighteenth century, and driven successfully forward by the young widow owner as innovator and developer of the new markets, a pioneer against a backdrop of challenges of military aggression and blockades which she successfully negotiated. The 30 year leadership of cellar master Jacques Peters has ensured the maintenance of high quality at Veuve Clicquot.
